Recipe Corner: I’m tired of eating eggs for breakfast, what else can I eat?




Many traditional breakfast foods are loaded with mostly carbohydrates, start your morning right with this protein pancake recipe.





INGREDIENTS:
½ cup dry oats
½ cup low fat cottage cheese
1 tsp vanilla
1 egg
2 egg whites
½ tsp cinnamon

 DIRECTIONS:
  1. Blend all ingredients in blender.
  1. Spray skillet with cooking spray and cook just like "silver dollar" pancakes (3 inch diameter), a few small ones at a time.
  1. Top with your favorite fresh fruit!

 NUTRITION
Serving Size 5 pancakes: 337 kcal, 7 gm fat, 32 gm carbs, 4 gm fiber, 31 gm protein (Don’t forget to count carbs for your fruit of choice)
